Herbed Turkey Breasts with Mozzarella
Source: Gerry Kennie Hatchery Division Cook Time: 20 minutes Number of Servings: 4
1 Pound EdenValley Boneless Turkey Breast 1 Tbsp Vegetable Oil 1 Can Tomatoes 1 Tbsp Dijon Mustard 1/2 Tsp Rosemary Leaves, dried 1/4 Tsp Thyme Leaves, dried 1/4 Tsp Salt 1 Cup Mozarella Cheese, shredded 2 Tbsp Cornstarch
Instructions: Coat boneless turkey breasts with cornstarch. Heat oil in large frying pan over medium-high heat. Brown turkey on both sides. Stir in tomatoes, mustard, rosemary, thyme and salt. Simmer, uncovered, for about 10 minutes, stirring occasionally, until turkey is tender. Sprinkle with shredded mozzarella; heat until melted, about 1 minute. Serve beside pasta and stir fried vegetables.
