Easy Shrimp Tostadas
 Tostadas are crisply fried tortillas topped with various ingredients.
Yield: 4 servings
Ingredients:
1 package (about 21 to 30) frozen peeled deveined large shrimp, thawed, rinsed, drained
Salt, if desired
Pepper, if desired
4 (6-inch) crisply cooked corn tortillas
1 cup coleslaw mix*
4 tablespoons prepared creamy southwest salad dressing
Directions:
Melt butter in 10-inch skillet over medium-high heat until sizzling; add shrimp. Cook just until shrimp are pink (2 to 3 minutes). Remove from heat; season lightly with salt and pepper, if desired.
To assemble tostadas, place tortillas onto individual serving plates. Top each with 1/4 cooked shrimp, 1/4 cup coleslaw mix and 1 tablespoon salad dressing.
*Substitute shredded lettuce.
Recipe Tip:
- Crisply cooked tortillas come stacked and may say “tostada” on the package. Look for them in the Mexican aisle of the supermarket.
- Jazz up these tostadas with chopped cilantro and shredded Mexican cheese!
